Basically, chocolate is available in many types and is a popular ingredient. The main types of chocolate are white chocolate, dark chocolate, milk chocolate, semisweet chocolate, bittersweet chocolate, and unsweetened chocolate.
This different form and flavors of chocolate may be produced with ordinary cacao beans (mass produced and cheap), or specialty cacao beans (aromatics and expensive), or a combination of this two types.
As I just tell you earlier, all the types of chocolate have their own ingredient and it uses. So, lets we talk about each types of chocolate.

- White Chocolate- Low contents of cacao solid or without cacao solid. Some countries do not called white chocolate as 'chocolate' because of low contents of cacao solid. Made with cacao butter or vegetable oils, sugar, milk, emulsifier, vanilla or sometime other flavoring. Mostly used to make chocolate mousse and Panna Cotta and other desserts.
- Dark Chocolate- High content of cacao solid, produce by adding sugar to cacao, no or very little milk as an additive. This chocolate can either be sweet, semi sweet, bittersweet, or unsweetened. Sometime it also called as "Plain Chocolate".
- Milk Chocolate- It refers with milk powder or condensed milk added. It contains 10-20% cacao solid (includes cacao and cacao butter) and and more than 12% milk solid. It is rarely use for baking except for cookies.
- Semisweet Chocolate- Frequently used for cooking purpose (cake, cookies, and brownies). This type of chocolate is easy to find in many grocery stores. It has a sweet flavor with a low (typically half) sugar content.
- Bittersweet Chocolate- Is chocolate with more cacao butter, vanilla and a bit lecithin was added. It often used in baking or cooking. In this chocolate, the rule is the higher the content of cacao solid, the content of sugar is low and the less sweet chocolate will be.
- Unsweetened Chocolate- Also known as a bitter chocolate that mostly used for baking. It is also can be used as a base for cakes, brownies, and cookies with addition of sugar. It is not suitable taken to eat as a snack because of it flavor is not good.
